Each week, Sonia & Yui cook a recipe shared by one of our Cookpad home cooks, last week our Recipe of the Week was Carrie's delicious, vegan chickpea curry recipe.
This incredibly tasty chickpea curry recipe uses mainly store cupboard ingredients and kitchen staples, such as tinned chickpeas and tinned pineapple. There are also various substitutions you can make, for example if you don’t have creamed coconut, why not use full fat coconut milk or cream instead? Are you making the chickpea curry for children? If so, miss out the scotch bonnet and perhaps add a pinch of mild chilli powder instead.
The final chickpea curry is creamy, tasty and with bursts of sweetness from the pineapple. It only takes a few minutes to make and is budget friendly too.
