Wow, where has the year gone? Christmas is just around the corner, which means that this week we are turning our attention to a technique which we Brits use to make the most heavily-laden Christmas dinner table... ROASTING!

This Christmas is going to be a little bit different this year. Many people making the classic Christmas dinner will be cooking it for the first time. We at Cookpad want to help by dedicating this full week on Cookpad to roasting, so everyone can serve golden roast potatoes and most succulent turkey on Christmas day 🦃

Keep the oven hot and don’t hold back on putting a good glug of oil in the roasting pan! The Christmas roast is one of the most traditional British dishes and across the country on the same day we all sit down to enjoy this classic meal together. The UK Christmas dinner usually consists of roasted turkey (or Goose, for the more traditional cooks), sprouts (controversial but delicious roasted), stuffing, roast parsnips, chestnuts and potatoes!

Now, there may be some debate about what else goes on the Christmas dinner table! Some families enjoy Yorkshire puddings with their Christmas dinner, whilst others serve pigs in blankets on the side. Also, who decided turkey has to be the main event? Some families enjoy goose, chicken or beef on Christmas day. This means that there are so many different techniques to roasting the perfect Christmas dinner, often families have their own techniques which have been passed down through generations. Tips and Tricks

-To avoid hours by the oven, par-boil your potatoes first in salted water! Leave them to dry out and shake them in the pan with a bit of flour to make them crispy on the outside and fluffy in the middle!

-Honey and mustard are best friends with parsnips and make them delicious when roasted!

-Don’t be shy about taking too much time to roast something. Cut up your veggies in big pieces and give them a good long time in the oven to cook all the way through, to avoid sad crispy vegetables on the side of your plate. Never rush roasting!

-Brine your meat to give it flavour and stop it drying out. Rub salt onto your meat and leave it to sit in a bag overnight (or a few days before it is cooked). This gives your meat a crispy skin and succulent inside.

-Try roasting your stuffing outside your turkey to avoid it going soggy. Instead stuff your turkey with aromatic herbs to flavour the meat from the inside out.

-Elevate your roast meat in the pan to avoid it sticking and steaming at the bottom! You don’t need a roasting rack for this, just lay out strips of veggies along the bottom of the pan and place your meat on top of them.

-For roast potatoes, don’t crowd the roasting pan. Lay them out in a single layer to give them all enough space to get extra crispy and delicious.
