Not only are soups really comforting, they are also a great way to get some added nutrition because they often contain hidden vegetables. Soups are really versatile and you can switch up the ingredients depending on what you have in your fridge (see our top tips below). You can serve some bread on the side or add in some cooked rice or pasta to bulk it up and make an extra filling meal.
Soup Top Tips:
- Chop onions and celery stalks and freeze them so that when fresh onions are hard to come by, you still have a good soup base to hand.
- If you don’t have stock, use boiling water steeped in herbs, bay leaves and peppercorns for some extra flavour.
- You can swap vegetables and pulses around depending on what you have in stock - sweet potatoes, butternut squash, potatoes, parsnips and other root vegetables can be swapped like for like. Leeks can be used instead of onions if needed. Swap beans around depending on what you have in the cupboard, haricot beans can be swapped for black beans or butter beans, or use a tin of baked beans if you have lots of those.
- Use dry herbs in place or fresh herbs, or vice versa if you have fresh herbs in the garden. Generally you use a smaller amount of dry herbs as the flavour is more concentrated - so for 1 tbsp dried herbs, sub 3 tbsp of fresh herbs. Or for 3 tbsps fresh herbs, use 1tbsp dried herbs.
