As home cooks who like to follow and create recipes, we often end up with ingredients in our kitchens that need using up or they risk being wasted.
Recipes regularly call for either egg whites or egg yolks, so once you’ve separated them, what do you do with the leftovers? Don’t put them in the food waste … let’s see what we can make with them instead!
How do I use up … egg yolks?
We’ve all been there, you’ve used the egg whites to make meringues and souffle’s but now you have the yolks left over. What shall we do with them?
CURED EGG YOLK Curing egg yolks sound super fancy but really it just involves drawing the moisture out of the yolk using salt so that they don’t go off. Try gently packing your egg yolks in salt and leaving them in the refrigerator for a couple of weeks. Once dry, your yolks can be grated like cheese over your dish of choice.

MARINATED EGG YOLK Another great idea is to marinate your egg yolk in soy and mirin overnight, then use it to top sticky rice for a delicious treat. Ashley has a really simple, basic marinated egg yolk recipe to get you started.

HOMEMADE CUSTARD Of course a really classic dish for using up egg yolks is homemade custard. Custard is made by combining egg yolks, sugar and flour, then whisking in warm milk while heating. How to use up …… egg whites?
Depending on what you’ve been cooking in your kitchen, you may have egg whites left over instead of egg yolks. What can we make with these?
EGG WHITE BISCUITS Egg whites make brilliant biscuits, why not try Hiroko’s egg white and almond biscuits recipe also known as ‘Langues de Chat’.
MACAROONS Alternatively, add icing sugar and powdered almonds to make these classic macaroons from Alaa Halim.
