Courgettes (also known as zucchini) are a type of summer squash that are widely available in the UK late summer and early autumn. Many gardeners grow courgettes in their gardens and allotments and they are equally readily available in the shops and markets.
The secret ingredient
Courgettes are a secret super ingredient available to home cooks that will make your cakes deliciously soft and moist. Not only that, but courgettes are nutrient rich - packed with antioxidants, vitamins and minerals. They are also high in fibre and low in calories. With a mild flavour, they won’t make your cake taste of vegetables, but they will give it an amazing texture and perhaps even contribute to your five a day!
